Chef's Garden Sunrise

Sunrise comes late this time of year. On the shortest day, Saturday, December 21st, the sunrise was at 7:49 a.m. and sunset at 4:33 p.m., 8 hours and 43 minutes! The good news is that we are now in a period of increasing day length. Before long, the plants will notice and increase growth.

Lettuce

We continue to harvest lettuce. We have it growing both in the greenhouse stock tanks and outside in stock tanks. The outside lettuce is going to be overcome by the miners’ lettuce in another month or so. However, we will have more lettuce planted elsewhere, unlike the miners’ lettuce!

Parsnips

We’ve now had freezing temperatures, which is the prerequisite for the excellent sweet flavor of parsnips. We can harvest them at any time. Just let us know when you would like to use them.

Radicchio

We have some amazing radicchio coming up. It should be prime harvest size by the end of January/February 1st.

Micro-greens

We are winding up micro-green production for the year. Sorrel grows slowly but surely. During the shortest and coolest months, we mainly concentrate on the mustards, mizuna, cress, and arugula. They are the most reliable. We will have micro-greens through to New Year’s Eve dinner. Then, we take a short break before returning strong at the end of January.

Fava Beans

The fava beans are growing. If we do not get a deep freeze like last January, we can expect to harvest in June.

Elephant & Hard-neck Garlic

The elephant garlic and hard-neck garlic are up and growing. We will have scapes, green garlic next spring, and garlic bulbs next summer/fall.

Sunchokes & Celeriac

There are still good amounts of sunchokes and celeriac in the ground. They will hold for another couple of months.
