This immature radicchio is doggedly growing despite the cold, rain, and wind. This month the radicchio has moved from a loose rosette to forming tiny heads. We hope to harvest in six to eight weeks.
Besides weeds, other vegetables that are doggedly growing away this winter are fava beans, garlic, and leeks. The leeks need another couple of months before harvesting, garlic will be ready in spring for green garlic or scapes, and fava beans will be ready in late May or early June.
The sunchokes, or “Jerusalem Artichokes,” are hiding underground, waiting for harvest. Let us know when you want to use some.
We also have horseradish roots snaking through the soil of a couple of stock tanks. Please give us a good amount of warning when you need some since they take a long time to dig out. The roots twist and twine around, making a tangled underground mess! Each week brings us closer to harvesting the purple-sprouting broccoli. The buds are still very tight, and the color has not developed entirely. However, the vibrancy will come shortly. Once the broccoli is ready, we will have a lot of it over many weeks because we grow three varieties with different maturing dates.
The fingerling potatoes are patiently waiting to be used and will not last forever. We have an ample supply on hand.
Last week I mentioned that we replaced the heating cable on one of the tables in the greenhouse. Wow, what a difference. The micro-greens have taken off. We’re getting good germination, they are growing quickly, and we have plenty for your use.
